Cream Puff Filling

1/2 cup sugar
1/4 cup flour
1/2 teaspoon salt
1-1/2 cups milk, scalded
1 egg, beaten
1-1/2 Tablespoons butter
3/4 teaspoon vanilla

Mix sugar, flour and salt in top of double boiler.
Gradually stir in the hot milk.
Cook over direct heat until thickened, stirring constantly.
Stir a little hot mixture into beaten egg.
Return this to rest of mixture and place over boiling water, stirring constantly for 2 minutes.
Remove from heat.
Stir in butter and flavoring. Cool.
Fill into cream puffs.
