French Onion Soup

8 thinly sliced onions
8 Tablespoons butter or margarine
8 cups beef bouillon
8 thick slices French bread (toasted in oven)
1-1/4 teaspoon sugar
1-1/4 teaspoon salt
dash nutmeg
1/3 cup Sherry or Port
grated Swiss Cheese

Saute onion in butter until soft.
Add sugar, salt, nutmeg and toss well.
Cook slightly until onions are golden.
Add hot bouillon and bring to boil, then simmer.
Add wine to seasonings and ladle soup into 8 oven-safe soup bowls.
Top each with one slice French bread.
Cover bread with grated cheese and place in 300 degree oven until cheese is melted and bubbly.
