Homemade Tomato Sauce

1 large onion, chopped (1 cup)
1 clove of garlic, minced
1/4 cup olive oil or vegetable oil
1 can (2 pounds, 3 ounces) Italian tomatoes
1 can (6 ounces) tomato paste
2 teaspoons leaf basil, crumbled
1 teaspoon salt
Dash of sugar
1 cup water
 
1. Saute onion and garlic in oil until soft in a large saucepan; stir in tomatoes, tomato paste, basil, salt, sugar and water.

2. Heat to bubbling; reduce heat; simmer, uncovered, stirring frequently, 45 minutes, or until sauce has thickened.

Makes about 5 cups
