Li’s Simple Stir Fry
cjRecipes.com1 cup thinly sliced, skinless, boneless chicken breast
2 teaspoons cornstarch
1 teaspoon soy sauce
1-1/2 Tablespoon vegetable oil
2-1/2 cups chopped vegetables (your choice):
Pea pods, water chestnuts, bean sprouts, etc.
1 teaspoon minced garlic
1 teaspoon fresh ginger root
1 cup all-purpose sauce (your choice):
teriyaki, mandarin orange,sweet & sour, oriental bar-b-que, etc.
Mix chicken, cornstarch and soy sauce in small bowl. Heat 1 Tablespoon oil in large non-stick skillet. Stir-fry chicken until it starts to brown then remove and set aside. Heat remaining oil in pan. Add vegetables, garlic and ginger. Stir-fry 1 to 2 minutes. Add cooked chicken and all-purpose sauce to pan. Coat chicken and heat thoroughly. If so desired, serve with Chow Mein noodles.
Makes 2-4 servings.
