Marinated Vegetables

2 Tablespoons salt
1 cup sugar
1/4 cup dry mustard
1 Tablespoon cracked pepper
1 cup cider vinegar
2 cup vegetable or salad oil
1 medium fresh raw onion
In mixing bowl, combine dry ingredients: salt, sugar, dry mustard and pepper. Stir with whisk. Add cider vinegar and onion. (Chop the onion in a food processor until very smooth and slushy). Whisk in oil. Pour this over still warm steamed vegetables. Best vegetables to use: canned beets, canned whole green beans. Fresh vegetables, blanched or steamed: Asparagus, carrots, broccoli, cauliflower. Marinate overnight and drain well.
