Pie Meringue

1/4 teaspoon salt
1/2 teaspoon vanilla
6 Tablespoons sugar
Eggs need to be at room temperature.
Place whites in bowl; add salt and vanilla.
With electric mixer at high speed or with hand beater, beat until frothy throughout.
Add sugar a little at a time, beating well after each addition.
Continue beating until stiff peaks are formed.
To test, slowly withdraw beater and hold up.
Meringue should form pointed peaks that are so stiff they stand upright and don’t curl over.
Place mounds of meringue around top edge of filling.
Heap rest of meringue in center.
With back of spoon, pull up points of meringue.
Put in oven on BROIL.
Watch closely until tops turn brown.
