Sweet Onion Casserole

1/4 cup chopped bell pepper
4 Tablespoons cooking oil or margarine
3 cups grated cheddar cheese
1-1/4 cups heavy cream
1 egg and 2 yolks
1 Tablespoon chopped pimento (optional)
1 teaspoon seasoning salt
paprika as garnish
Pre-heat oven to 400 degrees.
Saute onions and bell pepper in cooking oil for 15 minutes on medium-low heat.
Place half of grated cheese in 2-quart casserole dish.
Top with sauteed onions and bell pepper.
Add remaining cheese on top of onions and pepper.
In mixing bowl combine heavy cream (unwhipped), eggs, pimento and salt to make a sauce.
Pour sauce over cheese and onion.
Sprinkle paprika as a garnish.
Bake in 400 degree oven for 10 minutes; lower heat to 325 degrees and bake for 25 minutes.
Serves 8.
